Quick Black Forest Torte

  Ingredients: 4 cups mini-marshmallows 1 chocolate cake mix 1 can cherry pie filling 1 large container of Cool Whip (or 2 cups whipping cream) (light) Method: Pour four cups of mini-marshmallows into a greased 9×13 inch cake pan. Prepare chocolate cake mix according to directions on package. Pour over marshmallows. Spoon cherry pie filling evenly over cake. Bake at 350°F for about 50 minutes…or until toothpick inserted comes out clean. Cool. Top with whipped topping. (If using whipping cream, whip 2 cups of cream with 3 Tablespoons sugar and 2 teaspoons vanilla until almost ready to form peaks.) Serves 15

Creamy Mushroom Chicken and Wild Rice Soup

  ingredients 2 tablespoons butter 1 pound mushrooms, sliced 1 tablespoon butter 1 onion, diced 2 carrots, diced 2 stalks celery, diced 2 cloves garlic, chopped 1 teaspoon thyme, chopped 6 cups chicken broth 1 cup wild rice (or a blend of rice including wild rice) 1 1/2 cups chicken, cooked and diced or shredded 1 cup milk or cream 1 cup parmigiano reggiano (parmesan), grated salt and pepper to taste directions 1. Melt the butter in a pan over medium-high heat, add the mushrooms and cook until the mushrooms have released their liquids and the liquid has evaporated, about 10-15 minutes, before setting aside. 2. Melt the butter in the pan, add the onions, carrots and celery and cook until tender, about 8-10 minutes. 3. Mix in the garlic and thyme and cook until fragrant, about a minute. 4. Add the broth, rice, chicken and mushrooms, bring to a boil, reduce the heat and simmer, covered, until the rice is tender, about 20-30 minutes. 5.   Ingredients  2 large chicken breasts, diced 1 tbsp olive oil 2 tsp garlic powder 1 tsp onion powder 1 tsp paprika Salt and pepper, to taste 1 cup shredded cheddar cheese 1/2 cup shredded mozzarella cheese 4 large flour tortillas 1/2 cup creamy garlic sauce (store-bought or homemade) Fresh parsley, chopped (optional, for garnish) Directions  Season the chicken: In a large bowl, mix the diced chicken with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated. Cook the chicken: Heat a non-stick skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes, until fully cooked and browned on all sides. Remove from heat and set aside. Assemble the wraps: Lay out the tortillas and spread a spoonful of creamy garlic sauce on each one. Top with the cooked chicken, then sprinkle with shredded cheddar and mozzarella cheeses.
