Custard Cream Cake

Ingredients

For the cake:

  • 3 eggs
  • 1 cup sugar
  • 1 cup milk
  • ½ cup oil (or melted butter)
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • Pinch of salt

For the custard:

  • 2 cups milk
  • ½ cup sugar
  • 3 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla
  • 1 tbsp butter

For topping:

  • Powdered sugar

Instructions

1. Make the custard

In a saucepan:

  • Mix milk, sugar, cornstarch, egg yolks, and vanilla.
  • Cook on medium heat, stirring constantly until thick.
  • Remove from heat, add butter.
  • Let cool slightly.

2. Make the cake batter

  • Beat eggs and sugar until light.
  • Add milk, oil, and vanilla.
  • Add flour, baking powder, and salt. Mix well.

3. Assemble

  • Pour half of the cake batter into a greased baking dish.
  • Spread custard on top.
  • Pour remaining batter over the custard.

4. Bake

  • Bake at 180°C / 350°F for 35–40 minutes until golden.

5. Finish

  • Let cool completely.
  • Dust with powdered sugar.
  • Cut into squares and serve.
