Fluffy Pull-Apart Milk Bread Rolls Recipe

There is nothing more comforting than the smell of freshly baked bread filling your kitchen. These fluffy pull-apart milk bread rolls are incredibly soft, light, and slightly sweet, with a beautiful golden top and a cloud-like interior. Each bite melts in your mouth, making them perfect for breakfast, sandwiches, or enjoying warm with butter and tea. This recipe is simple and reliable, even if you are a beginner. The secret lies in proper kneading, resting time, and using milk to create that rich, tender texture. Once you try these homemade rolls, you may never go back to store-bought bread again.

Ingredients

  • 500 g all-purpose flour
  • 250 ml warm milk
  • 2 tablespoons sugar
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 1 egg
  • 3 tablespoons butter (softened)

For brushing:

  • 1 egg yolk + 1 tablespoon milk

Instructions

1. Activate the yeast

In a bowl, mix warm milk, sugar, and yeast. Let it rest for 5–10 minutes until foamy.

2. Prepare the dough

Add flour, salt, egg, and softened butter. Mix until a dough forms.

3. Knead

Knead the dough for 8–10 minutes until smooth and elastic. The dough should be soft but not sticky.

4. First rise

Cover and let the dough rise in a warm place for 1–1.5 hours until doubled in size.

5. Shape

Divide into equal balls and place them in a baking tray close to each other.

6. Second rise

Cover and let rise again for 30–45 minutes.

7. Bake

Brush with egg mixture and bake at 180°C for 18–22 minutes until golden brown.

Tips for perfect softness

  • Use warm milk, not hot
  • Knead well to develop gluten
  • Do not skip rising time
  • Cover after baking to keep them soft
