Ingredients
4 cups milk
½ cup sugar
¼ cup cornstarch
2 tbsp butter
1 tsp vanilla extract
Pinch of salt
Instructions
Mix cold
In a bowl, whisk cornstarch + 1 cup milk until fully smooth (no lumps).
Heat the milk
In a pot, add remaining milk, sugar, and salt.
Heat on medium, stirring until sugar dissolves (don’t boil yet).
Thicken
Slowly pour in the cornstarch mixture while whisking nonstop.
Cook on medium-low, stirring constantly, until thick and glossy (5–7 minutes).
Finish
Remove from heat.
Stir in butter and vanilla.
Set
Pour into a glass dish.
Let cool, then refrigerate 2–3 hours until fully set.
