🍰 Raisin Semolina Cake (Basbousa-Style)
Moist, golden, and lightly sweet — perfect with tea ☕✨
📝 Ingredients
- 1 cup semolina (fine)
- 1 cup all-purpose flour
- ¾ cup sugar
- ½ cup vegetable oil or melted butter
- 1 cup yogurt
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp baking powder
- Pinch of salt
- ¾ cup raisins
Optional syrup (for extra moisture):
- ½ cup sugar
- ½ cup water
- 1 tsp lemon juice
- 1 tsp orange blossom or vanilla (optional)
👩🍳 Instructions
- Preheat oven to 180°C (350°F). Grease a square pan.
- In a bowl, whisk eggs and sugar until light.
- Add oil (or butter), yogurt, and vanilla — mix well.
- Stir in semolina, flour, baking powder, and salt.
- Fold in raisins gently.
- Pour batter into pan and smooth the top.
- Bake 35–40 minutes until golden and a toothpick comes out clean.
Optional syrup:
- Simmer sugar + water 5 minutes, add lemon & flavoring.
- Pour warm syrup over hot cake for extra softness 💛
