🍰 Raisin Semolina Cake (Basbousa-Style)
Moist, golden, and lightly sweet — perfect with tea ☕✨

📝 Ingredients

  • 1 cup semolina (fine)
  • 1 cup all-purpose flour
  • ¾ cup sugar
  • ½ cup vegetable oil or melted butter
  • 1 cup yogurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • Pinch of salt
  • ¾ cup raisins

Optional syrup (for extra moisture):

  • ½ cup sugar
  • ½ cup water
  • 1 tsp lemon juice
  • 1 tsp orange blossom or vanilla (optional)

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Grease a square pan.
  2. In a bowl, whisk eggs and sugar until light.
  3. Add oil (or butter), yogurt, and vanilla — mix well.
  4. Stir in semolina, flour, baking powder, and salt.
  5. Fold in raisins gently.
  6. Pour batter into pan and smooth the top.
  7. Bake 35–40 minutes until golden and a toothpick comes out clean.

Optional syrup:

  • Simmer sugar + water 5 minutes, add lemon & flavoring.
  • Pour warm syrup over hot cake for extra softness 💛

Cool slightly, cut into squares, and enjoy!
