Large-Batch Moist Raisin Cake (Tray Bake)

 






๐Ÿงบ Ingredients (large tray – serves ~20–24 squares)

Wet ingredients

1½ cups sugar

1 cup vegetable oil (or melted butter)

3 large eggs

1½ cups milk (or buttermilk for extra softness)

1 tsp vanilla extract

Dry ingredients

3½ cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

½ tsp nutmeg (optional)

½ tsp salt

Add-ins

1½–2 cups raisins

Optional: ½ cup chopped nuts (walnuts or almonds)

Preheat oven to 180°C / 350°F.

Grease and line a large baking tray (about 30×40 cm / 12×16 in).

In a big bowl, whisk sugar, oil, eggs, milk, and vanilla.

In another bowl, mix all dry ingredients.

Gradually add dry mix to wet mix. Stir until smooth.

Fold in raisins (and nuts if using).

Pour batter into tray and level the top.

Bake 30–40 minutes until golden and a toothpick comes out clean.

Let cool, then cut into squares.

Light dusting of powdered sugar

Drizzle with simple glaze (powdered sugar + milk)
