🍤 Creamy Garlic Shrimp Pasta

Ingredients

  • 12 oz rotini pasta (or any short pasta)
  • 1 lb shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth (or pasta water)
  • ¾ cup grated Parmesan cheese
  • ½ tsp paprika
  • ½ tsp smoked paprika (optional but 🔥)
  • ½ tsp garlic powder
  • Salt & black pepper to taste
  • ½ tsp chili flakes (optional)
  • ½ cup diced tomatoes (optional, like in the photo)
  • Fresh parsley, chopped

Instructions

1️⃣ Cook the Pasta
Boil pasta in salted water until al dente. Reserve ½ cup pasta water, then drain.

2️⃣ Season & Sear the Shrimp
Season shrimp with salt, pepper, paprika, and garlic powder.
Heat olive oil + 1 tbsp butter in a pan over medium-high heat.
Sear shrimp 1–2 minutes per side until golden. Remove and set aside.

3️⃣ Make the Creamy Sauce
In the same pan, add remaining butter and garlic. Sauté 30 seconds.
Add chicken broth and let reduce slightly.
Pour in heavy cream, stir, then add Parmesan cheese.
Simmer until creamy and smooth.

4️⃣ Combine Everything
Add pasta and tomatoes to the sauce. Toss well.
Add shrimp back in and mix gently.
Use pasta water if needed to loosen the sauce.

5️⃣ Finish & Serve
Taste and adjust seasoning.
Garnish with parsley and extra Parmesan.


🔥 Tips

  • Don’t overcook shrimp — they should be juicy
  • Parmesan melts best off heat
  • Want extra richness? Add a splash of cream cheese
