Baked Beans Salad

Ingredients

  • 2 cups baked beans (canned, drained slightly)
  • 1 small red onion, finely chopped
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup sweet corn (canned or cooked)
  • 2 tbsp fresh parsley or cilantro, chopped

Dressing

  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp sugar or honey
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika (optional)

Instructions

1️⃣ In a large bowl, add baked beans, red onion, bell pepper, cherry tomatoes, and corn.

2️⃣ In a small bowl, whisk together olive oil, vinegar (or lemon juice), sugar, salt, pepper, and paprika.

3️⃣ Pour the dressing over the salad and gently mix until well combined.

4️⃣ Sprinkle with fresh parsley or cilantro.

5️⃣ Chill for 15–30 minutes before serving for best flavor.


Serving Tips

  • Serve as a side dish for grilled meat or chicken
  • Add cucumber or avocado for extra freshness
  • For protein, mix in tuna, grilled chicken, or boiled eggs
