🥕 Spicy Pickled Carrot Salad
Ingredients:
- 1 kg carrots, grated
- 3 cloves garlic, minced
- 1 bunch parsley & cilantro, finely chopped
- 2 tbsp harissa or chili paste (adjust to taste)
- 1 tsp ground ginger
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp lemon zest
- 1 tsp salt (or to taste)
- ½ cup vinegar
- ½ cup olive oil
- Juice of ½ lemon
- Hot chili pepper (optional)
Instructions:
- Boil the carrots in salted water until slightly tender (do not overcook).
- Drain well and let cool completely.
- In a large bowl, mix carrots with garlic, parsley, and cilantro.
- Add all spices, harissa, vinegar, lemon juice, and olive oil.
- Mix well until fully combined.
- Serve immediately or store in sterilized jars in the refrigerator.
Storage:
- Keeps in the refrigerator for 2–3 weeks
- Flavor improves after a few days 😋
