🥕 Spicy Pickled Carrot Salad

Ingredients:

  • 1 kg carrots, grated
  • 3 cloves garlic, minced
  • 1 bunch parsley & cilantro, finely chopped
  • 2 tbsp harissa or chili paste (adjust to taste)
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp lemon zest
  • 1 tsp salt (or to taste)
  • ½ cup vinegar
  • ½ cup olive oil
  • Juice of ½ lemon
  • Hot chili pepper (optional)

Instructions:

  1. Boil the carrots in salted water until slightly tender (do not overcook).
  2. Drain well and let cool completely.
  3. In a large bowl, mix carrots with garlic, parsley, and cilantro.
  4. Add all spices, harissa, vinegar, lemon juice, and olive oil.
  5. Mix well until fully combined.
  6. Serve immediately or store in sterilized jars in the refrigerator.

Storage:

  • Keeps in the refrigerator for 2–3 weeks
  • Flavor improves after a few days 😋
