For the Doughnuts

  • 3 ½ cups all-purpose flour
  • ¼ cup sugar
  • 2 ¼ tsp instant yeast
  • ¾ cup warm milk
  • 2 tbsp melted butter
  • 2 egg yolks
  • ½ tsp salt
  • Oil for frying

For the Vanilla Custard Filling

  • 2 cups milk
  • ½ cup sugar
  • 4 egg yolks
  • 3 tbsp cornstarch
  • 2 tbsp butter
  • 1 tsp vanilla extract

For the Chocolate Glaze

  • ½ cup heavy cream
  • 120 g dark chocolate (chopped)
  • 1 tbsp butter

👩‍🍳 Instructions

1️⃣ Make the Dough

  1. Mix warm milk, sugar, and yeast. Rest 5 minutes.
  2. Add egg yolks, butter, salt, and flour.
  3. Knead until soft and smooth (8–10 minutes).
  4. Cover and let rise 1–1½ hours until doubled.

2️⃣ Shape & Fry

  1. Roll dough to 1.5 cm thickness.
  2. Cut circles and place on tray.
  3. Rest 30 minutes.
  4. Fry in 170°C oil until golden.
  5. Drain and cool completely.

3️⃣ Prepare Custard

  1. Heat milk until warm.
  2. Whisk yolks, sugar, and cornstarch.
  3. Slowly add milk, then cook until thick.
  4. Remove from heat, add butter & vanilla.
  5. Cover and chill.

4️⃣ Chocolate Glaze

  1. Heat cream until hot (not boiling).
  2. Pour over chocolate and butter.
  3. Stir until smooth and shiny.
