Coconut Cherry Cake

 








Here’s a simple and delicious Coconut Cherry Cake recipe:

Ingredients:

For the cake:

  • 3 eggs
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 cup yogurt (plain or vanilla)
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ cup cherries (fresh or canned, drained and halved)

For the topping:

  • ½ cup apricot jam (or any fruit jam)
  • ½ cup shredded coconut

Instructions:

  1. Preheat oven to 180°C (350°F) and grease a baking pan.
  2. Prepare the batter:
    • In a bowl, whisk eggs and sugar until light and fluffy.
    • Add oil, yogurt, and vanilla extract. Mix well.
    • Sift in flour and baking powder, then fold gently until combined.
  3. Add cherries: Pour the batter into the pan and evenly distribute the cherries on top.
  4. Bake: Place in the oven for about 30–35 minutes, or until a toothpick comes out clean.
  5. Glaze and decorate:
    • Warm the apricot jam and spread it over the warm cake.
    • Sprinkle shredded coconut generously on top.
  6. Let cool, slice, and enjoy!
