🥥 Coconut Cookies (Soft Inside, Golden Outside)
Ingredients
- 2 cups desiccated coconut
- 2 eggs
- ½ cup sugar
- ½ cup vegetable oil or melted butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2–3 tbsp all-purpose flour (just enough to bind)
Instructions
- Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
- In a bowl, whisk eggs + sugar until slightly creamy.
- Add oil (or butter) and vanilla, mix well.
- Add desiccated coconut and baking powder.
- Add flour little by little until you get a soft, moldable dough.
- Shape into small flat rounds.
- Place on tray and bake 12–15 minutes until lightly golden.
- Let cool — they firm up as they rest.
Tips
- For extra flavor: add lemon zest or orange zest 🍋🍊
- For softer cookies: don’t overbake
- Store in an airtight box up to 5 days
