Pineapple Shrimp Fried Rice

 









1. Pineapple Shrimp Fried Rice

Ingredients:

  • 3 cups cooked rice (cold, preferably day-old)
  • 2 tablespoons oil
  • 1 cup cooked shrimp
  • 1 cup pineapple slices (diced)
  • 1 cup peas
  • 1 cup corn
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil

Instructions:

  1. Heat oil in a large pan or wok over medium-high heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add shrimp and cook for 1–2 minutes.
  4. Add peas, corn, and pineapple. Stir well.
  5. Add cooked rice and mix thoroughly.
  6. Pour in soy sauce and sesame oil.
  7. Stir-fry for 3–5 minutes until heated through.
  8. Serve hot.

2. Ham Fried Rice

Ingredients:

  • 3 cups cooked rice
  • 2 tablespoons oil
  • 1½ cups fried diced ham
  • 4 cloves garlic, minced
  • ½ onion, diced
  • 2 eggs, lightly beaten
  • 1 teaspoon sesame oil
  • ¼ teaspoon black pepper
  • ½ cup green onions

Instructions:

  1. Heat oil in a pan.
  2. Add onion and garlic, sauté until soft.
  3. Add ham and cook for 2 minutes.
  4. Push ingredients aside, add eggs, scramble lightly.
  5. Add rice and mix everything together.
  6. Season with sesame oil and black pepper.
  7. Stir in green onions and serve.

3. Chicken Fried Rice

Ingredients:

  • 3 cups cooked rice
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • ½ cup white onion, minced
  • ½ cup spring onions
  • 2 tablespoons soy sauce
  • ¼ teaspoon black pepper
  • 1 teaspoon sesame oil
  • 1 cup cooked chicken (diced)

Instructions:

  1. Heat oil in a wok.
  2. Sauté onion and garlic until fragrant.
  3. Add chicken and cook briefly.
  4. Add rice and stir well.
  5. Add soy sauce, sesame oil, and pepper.
  6. Stir-fry for 3–4 minutes.
  7. Garnish with spring onions and serve.

4. Egg Fried Rice

Ingredients:

  • 3 cups cooked rice
  • 2 tablespoons oil
  • 2 eggs
  • 1 cup peas
  • 1 cup pineapple slices (optional, as shown)
  • 1 onion, diced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions:

  1. Heat oil in a pan.
  2. Scramble eggs lightly, remove and set aside.
  3. Sauté onion until soft.
  4. Add peas and pineapple.
  5. Add rice and stir well.
  6. Return eggs to the pan.
  7. Add soy sauce and sesame oil.
  8. Stir-fry and serve.

5. Shrimp Fried Rice

Ingredients:

  • 3 cups cooked rice
  • 2 tablespoons oil
  • 1½ cups cooked shrimp
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 egg
  • 3 tablespoons low-sodium soy sauce
  • ¼ teaspoon black pepper
  • 1 teaspoon sesame oil
  • ½ cup green onions

Instructions:

  1. Heat oil in a pan.
  2. Sauté onion and garlic.
  3. Add shrimp and cook briefly.
  4. Push aside, scramble egg in the pan.
  5. Add rice and mix well.
  6. Season with soy sauce, sesame oil, and pepper.
  7. Add green onions and serve hot.

6. Bacon Fried Rice

Ingredients:

  • 3 cups cooked rice
  • 2 tablespoons oil
  • 1 cup fried diced bacon
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups frozen peas and carrots
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ¼ teaspoon black pepper
  • ½ cup green onions
  • 1 fried egg (optional topping)

Instructions:

  1. Heat oil in a pan.
  2. Add onion and garlic, sauté until soft.
  3. Add bacon and vegetables, cook for 2–3 minutes.
  4. Add rice and mix well.
  5. Season with soy sauce, sesame oil, and pepper.
  6. Stir-fry until hot.
  7. Top with fried egg if desired and serve.
