Mexican Rice Skillet

One-pan, bold flavors, and perfect for a quick dinner 😍

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice (uncooked)
  • 1½ cups chicken broth
  • 1 cup tomato sauce (or crushed tomatoes)
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt & pepper, to taste
  • 1 cup corn (fresh or frozen)
  • 1 cup black beans, rinsed
  • 1 cup cooked chicken or ground beef (optional)
  • ½ cup shredded cheese
  • Fresh cilantro (optional)

Instructions

  1. Heat oil in a large skillet over medium heat. Sauté onion until soft, add garlic and cook 30 seconds.
  2. Stir in rice, chili powder, cumin, paprika, salt, and pepper. Toast for 1 minute.
  3. Add chicken broth and tomato sauce. Bring to a simmer.
  4. Cover and cook on low for 15–18 minutes, until rice is tender.
  5. Stir in corn, black beans, and cooked meat (if using).
  6. Sprinkle cheese on top, cover until melted.
  7. Garnish with cilantro and serve hot 🌿
