Mexican Rice Skillet
One-pan, bold flavors, and perfect for a quick dinner 😍
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain rice (uncooked)
- 1½ cups chicken broth
- 1 cup tomato sauce (or crushed tomatoes)
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- Salt & pepper, to taste
- 1 cup corn (fresh or frozen)
- 1 cup black beans, rinsed
- 1 cup cooked chicken or ground beef (optional)
- ½ cup shredded cheese
- Fresh cilantro (optional)
Instructions
- Heat oil in a large skillet over medium heat. Sauté onion until soft, add garlic and cook 30 seconds.
- Stir in rice, chili powder, cumin, paprika, salt, and pepper. Toast for 1 minute.
- Add chicken broth and tomato sauce. Bring to a simmer.
- Cover and cook on low for 15–18 minutes, until rice is tender.
- Stir in corn, black beans, and cooked meat (if using).
- Sprinkle cheese on top, cover until melted.
- Garnish with cilantro and serve hot 🌿
