Large-Batch Banana Cheesecake Bread

 






Makes ~4 large loaves or 6 medium loaves

Banana Bread Batter

6 cups mashed ripe bananas (about 12–14 bananas)

2 cups melted butter (or oil)

3 cups sugar (or 1½ cups sugar + 1½ cups brown sugar)

6 eggs

4 tsp vanilla

6 cups flour

4 tsp baking soda

2 tsp salt

2 tsp cinnamon (optional)

Cheesecake Filling

48 oz (1.36 kg) cream cheese, softened

1½ cups sugar

6 eggs

3 tsp vanilla

Instructions

Prep

Preheat oven to 325°F / 165°C

Grease and line loaf pans

Banana batter

Mix bananas, butter, sugar, eggs, vanilla

Stir in dry ingredients just until combined

Cheesecake layer

Beat cream cheese + sugar until smooth

Add eggs one at a time, then vanilla

Assemble

Banana batter → cheesecake → banana batter

Light swirl if desired (don’t overmix)

Bake

60–75 minutes (until center is just set)

Cool completely before slicing ❗
