Large Fruit Cake (One Big Pan)

 









๐Ÿงพ Ingredients

3 cups all-purpose flour

1 cup sugar (white or brown)

1 cup oil or melted butter

4 eggs

1 cup milk or orange juice

1 tbsp baking powder

1 tsp vanilla

½ tsp salt

๐ŸŠ Fruit Mix (you can adjust)

1 cup chopped dried apricots

1 cup raisins

½ cup chopped dates

½ cup chopped nuts (walnuts or almonds)

Zest of 1 orange (optional but recommended)

๐Ÿ‘‰ Toss fruits with 2 tbsp flour to prevent sinking.

๐Ÿ‘ฉ‍๐Ÿณ Instructions

Preheat oven to 170°C (340°F). Grease a large pan.

Beat eggs and sugar until light.

Add oil (or butter), milk/juice, and vanilla. Mix well.

Add flour, baking powder, and salt. Mix gently.

Fold in the floured fruit mixture.

Pour into pan and smooth the top.

Bake 60–75 minutes

(cover loosely with foil if top browns too fast).

Toothpick should come out clean.

Cool completely before slicing.

For extra moisture: brush cake with warm orange juice or syrup.

Keeps well 3–4 days at room temp, longer refrigerated.
