4 large heads broccoli, cut into small florets
2 large heads cauliflower, cut into florets
3–4 cups cherry tomatoes, halved
2 large red onions, thinly sliced
3 cups shredded cheese (cheddar or mozzarella – optional)
Creamy Dressing
3 cups mayonnaise (or half mayo + half Greek yogurt)
½ cup apple cider vinegar or lemon juice
⅓–½ cup sugar (or sugar-free sweetener, to taste ✅)

Instructions
Blanch vegetables (optional but recommended):
Boil broccoli & cauliflower for 1–2 minutes, then transfer to ice water. Drain well.
In a very large bowl, combine broccoli, cauliflower, tomatoes, red onion, and cheese.
Whisk all dressing ingredients until smooth.
Pour dressing over salad and toss until evenly coated.
Cover and refrigerate at least 1 hour before serving.
