Crispy Veggie Fritters (Large Batch)
Ingredients
3 cups shredded cabbage
2 cups grated carrots
1½ cups grated cheese (mozzarella or cheddar)
4 eggs
½ cup green onions, finely chopped
¾–1 cup flour (or almond flour for low-carb)
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
Optional: pinch of paprika or Italian seasoning
Oil for frying (or butter)
Instructions
Prep vegetables
Lightly squeeze excess moisture from the cabbage and carrots.
Mix batter
In a large bowl, combine cabbage, carrots, cheese, green onions, eggs, flour, and seasonings.
Mix until thick and scoopable.
Shape
Form into small logs or oval patties (like in the photo).
Cook
Heat oil in a skillet over medium heat.
Fry 3–4 minutes per side until golden brown and crispy.
Drain & serve
Place on paper towels. Serve hot.
