Ingredients:
- 4 chicken pieces (legs, thighs, or breast)
- 2 cups buttermilk (or 1 cup yogurt + 1 cup water)
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika (for flavor)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional for spice)
- 1 teaspoon baking powder (for extra crispiness)
- 2 eggs (beaten)
- Oil for frying (vegetable or peanut oil)
Instructions:
- Marinate the Chicken: Soak the chicken in buttermilk for at least 4 hours (or overnight) in the fridge. This makes the meat tender and juicy.
- Prepare the Coating: In a bowl, mix flour, salt, pepper, paprika, garlic powder, onion powder, cayenne, and baking powder.
- Coat the Chicken: Dip each piece in the flour mixture, then in the beaten eggs, and again in the flour mixture for a double coating. Press the flour onto the chicken for a crispy crust.
- Fry the Chicken: Heat oil to 350°F (175°C). Fry the chicken for 12-15 minutes, turning occasionally, until golden brown and crispy. Make sure the internal temperature reaches 165°F (74°C).
- Drain & Serve: Place the fried chicken on a wire rack (not paper towels) to keep it crispy. Serve hot with your favorite dipping sauce.
