🔥 Garlic Butter Salmon with Spinach & Mushrooms 🔥
Ingredients:
- 2 salmon fillets
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 3 cups fresh spinach
- Juice of ½ lemon
- 1 tablespoon fresh parsley, chopped (optional)
Instructions:
- Season the salmon fillets with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Add the salmon and cook for 3–4 minutes per side until golden and cooked through. Remove from the pan and set aside.
- In the same skillet, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms and cook for 3–4 minutes until softened and lightly browned.
- Add the spinach and cook until just wilted.
- Return the salmon to the skillet, drizzle with lemon juice, and spoon the garlic butter sauce over the salmon. Cook for 1–2 minutes.
- Garnish with fresh parsley if desired and serve hot.
