EASY • SAUCY • CRISPY • RESTAURANT-STYLE AT HOME


1️⃣ CRISPY GENERAL TSO’S CHICKEN 🌶️

INGREDIENTS:

CHICKEN:

  • 1½ LB BONELESS CHICKEN THIGHS OR BREASTS (CUT INTO 1-INCH PIECES)
  • ½ CUP CORNSTARCH
  • 2 EGGS (BEATEN)
  • SALT & PEPPER (TO SEASON)
  • OIL FOR FRYING

SAUCE:

  • ¼ CUP SOY SAUCE
  • 3 TBSP SUGAR
  • 2 TBSP RICE VINEGAR (OR WHITE VINEGAR)
  • 2 TBSP HOISIN SAUCE
  • 1 TBSP CORNSTARCH + 2 TBSP WATER (SLURRY)
  • ½ CUP CHICKEN BROTH OR WATER
  • 1 TSP SESAME OIL
  • 6 DRIED RED CHILIES (OPTIONAL)
  • 2 CLOVES GARLIC, MINCED
  • 1 TSP FRESH GINGER, MINCED

GARNISH (OPTIONAL):

  • GREEN ONIONS, SLICED
  • SESAME SEEDS

INSTRUCTIONS:

  1. SEASON CHICKEN WITH SALT & PEPPER. DREDGE IN CORNSTARCH, THEN DIP IN BEATEN EGGS.
  2. HEAT OIL IN A PAN/WOK. FRY CHICKEN UNTIL GOLDEN & CRISPY. DRAIN ON PAPER TOWELS.
  3. MIX SAUCE INGREDIENTS IN A BOWL. SAUTÉ GARLIC, GINGER & CHILIES 30 SEC.
  4. POUR IN SAUCE, STIR IN SLURRY, LET THICKEN.
  5. TOSS FRIED CHICKEN IN SAUCE UNTIL COATED.
  6. TOP WITH GREEN ONIONS & SESAME. SERVE HOT OVER RICE.

2️⃣ CRISPY SWEET & SOUR CHICKEN 🍍

INGREDIENTS:

  • 1½ LB CHICKEN BREAST/THIGHS (CUT 1-INCH)
  • ½ CUP CORNSTARCH
  • 2 EGGS, BEATEN
  • SALT & PEPPER
  • 1 RED BELL PEPPER, CHOPPED
  • 1 GREEN BELL PEPPER, CHOPPED
  • 1 SMALL ONION, CHOPPED
  • OIL FOR FRYING

SAUCE:

  • 1 CUP CANNED PINEAPPLE JUICE
  • ½ CUP SUGAR
  • ¼ CUP KETCHUP
  • ¼ CUP RICE VINEGAR
  • 2 TBSP SOY SAUCE
  • 1 TBSP CORNSTARCH + 2 TBSP WATER
  • 1 TSP GARLIC POWDER
  • ½ TSP PEPPER FLAKES (OPTIONAL)

INSTRUCTIONS:

  1. SEASON, DREDGE & FRY CHICKEN UNTIL GOLDEN.
  2. STIR-FRY PEPPERS, ONIONS & PINEAPPLE.
  3. MIX SAUCE INGREDIENTS, SIMMER & THICKEN.
  4. POUR SAUCE OVER CHICKEN & VEGGIES, TOSS TO COAT.
  5. SERVE HOT WITH RICE. GARNISH OPTIONAL.

3️⃣ ORANGE CHICKEN 🍊

INGREDIENTS:

  • 4 BONELESS CHICKEN BREASTS, BITE-SIZE
  • 3 EGGS, WHISKED
  • ⅓ CUP CORNSTARCH + ⅓ CUP FLOUR
  • SALT & OIL FOR FRYING
  • DRIED CHILIES (OPTIONAL)
  • 1 CUP HOMEMADE ORANGE SAUCE

ORANGE SAUCE:

  • 1 CUP ORANGE JUICE
  • ¼ CUP SUGAR
  • 2 TBSP RICE VINEGAR
  • ¼ CUP SOY SAUCE
  • ½ TBSP FRESH GINGER, MINCED
  • 2 CLOVES GARLIC, MINCED
  • 1 TSP RED PEPPER FLAKES
  • 1 TBSP CORNSTARCH (SLURRY WITH 2 TBSP WATER)

INSTRUCTIONS:

  1. DREDGE CHICKEN IN FLOUR MIX, DIP IN EGG, FRY UNTIL GOLDEN.
  2. SIMMER ORANGE SAUCE, ADD SLURRY TO THICKEN.
  3. TOSS FRIED CHICKEN IN SAUCE, SERVE WITH GREEN ONIONS & SESAME.

4️⃣ KUNG PAO BEEF 🥩🌶️

INGREDIENTS:

  • 1 LB SIRLOIN OR FLANK STEAK, THINLY SLICED
  • 1 TBSP SOY SAUCE
  • 1 TBSP SHAOSING WINE
  • 1 TSP CORNSTARCH + 1 TSP SESAME OIL

STIR-FRY:

  • 2 TBSP VEGETABLE OIL
  • 8–10 DRIED RED CHILIES
  • 3 CLOVES GARLIC, MINCED
  • 1-INCH GINGER, MINCED
  • 1 RED BELL PEPPER, SLICED
  • ½ YELLOW ONION, SLICED
  • ¼ CUP ROASTED PEANUTS
  • 2 GREEN ONIONS, CHOPPED

SAUCE:

  • 2 TBSP SOY SAUCE
  • 1 TBSP DARK SOY SAUCE
  • 1 TBSP RICE VINEGAR
  • 1 TBSP HOISIN SAUCE
  • 1 TBSP SUGAR
  • ¼ CUP WATER
  • 1 TSP CORNSTARCH

INSTRUCTIONS:

  1. MARINATE BEEF 15 MINUTES.
  2. SEAR BEEF, REMOVE.
  3. STIR-FRY CHILIES, GARLIC, GINGER, PEPPERS & ONIONS.
  4. RETURN BEEF, ADD SAUCE, THICKEN & COOK THROUGH.
  5. ADD PEANUTS & GREEN ONIONS, SERVE HOT.

5️⃣ SESAME CHICKEN 🍯

INGREDIENTS:

  • 1 LB CHICKEN, BITE-SIZED
  • ½ CUP CORNSTARCH
  • 2 EGGS, BEATEN
  • 1 CUP FLOUR (OPTIONAL FOR EXTRA CRUNCH)
  • SALT & PEPPER
  • OIL FOR FRYING

SESAME SAUCE:

  • ¼ CUP SOY SAUCE
  • 2 TBSP BROWN SUGAR
  • 2 TBSP RICE VINEGAR
  • 1 TBSP SESAME OIL
  • 1 TBSP CORNSTARCH + 2 TBSP WATER
  • 2 CLOVES GARLIC, MINCED
  • 1 TSP GINGER, GRATED
  • 1 TBSP HOISIN SAUCE
  • 1 TBSP SESAME SEEDS
  • 2 GREEN ONIONS, CHOPPED

INSTRUCTIONS:

  1. COAT CHICKEN, FRY UNTIL GOLDEN.
  2. SIMMER SAUCE UNTIL THICKENED.
  3. TOSS CHICKEN IN SAUCE, GARNISH, SERVE HOT.

6️⃣ PINEAPPLE CHICKEN 🍍🍗

INGREDIENTS:

  • 1 LB CHICKEN BREAST, 1-INCH CUBES
  • 1 TBSP OIL
  • 2 CUPS PINEAPPLE, DICED
  • 1 RED BELL PEPPER, DICED
  • ½ RED ONION, DICED
  • 2 GARLIC CLOVES, MINCED
  • 1 TSP GRATED GINGER
  • 1 GREEN ONION, DICED
  • 1 TSP SESAME SEEDS
  • SALT & PEPPER

SAUCE:

  • 1 CUP PINEAPPLE JUICE
  • ½ CUP CHICKEN BROTH
  • ¼ CUP SOY SAUCE
  • 1 TBSP BROWN SUGAR
  • 1 TBSP CORNSTARCH

INSTRUCTIONS:

  1. MIX SAUCE INGREDIENTS & SET ASIDE.
  2. COOK CHICKEN IN OIL UNTIL LIGHT BROWN.
  3. ADD PINEAPPLE, PEPPERS, ONION. COOK 2–3 MIN.
  4. ADD GARLIC & GINGER, COOK 30 SEC–1 MIN.
  5. POUR SAUCE, STIR UNTIL THICKENED.
  6. TOP WITH GREEN ONIONS & SESAME SEEDS. SERVE HOT.
