Grilled Chicken Cobb Salad

Here’s a beautifully written recipe for a classic Grilled Chicken Cobb Salad, fresh, satisfying, and perfectly balanced 🥗✨

Grilled Chicken Cobb Salad

A timeless American classic, the Cobb Salad is a celebration of contrasts — smoky grilled chicken, crisp greens, creamy avocado, salty bacon, and tangy blue cheese, all brought together with a bold, bright dressing. Hearty enough for a meal, elegant enough for company.

Ingredients

For the grilled chicken

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt, to taste

For the salad

  • 6 cups mixed salad greens (romaine, iceberg, or mixed leaves)
  • 2 hard-boiled eggs, peeled and chopped
  • 1 ripe avocado, diced
  • ½ cup cherry tomatoes, halved
  • 4 slices bacon, cooked until crisp and crumbled
  • ½ cup blue cheese, crumbled (or feta if preferred)
  • 2 tbsp fresh chives or parsley, finely chopped

For the dressing (classic vinaigrette)

  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • ½ cup olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Marinate the chicken
In a bowl, combine olive oil, lemon juice, garlic, paprika, salt, and pepper. Coat the chicken well and let it rest for at least 20 minutes to absorb the flavors.

  2. Grill to perfection
Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for 5–6 minutes per side until beautifully charred and cooked through. Let rest for 5 minutes, then slice.

  3. Prepare the dressing
Whisk together vinegar, Dijon, honey, salt, and pepper. Slowly drizzle in olive oil while whisking until emulsified and glossy.

  4. Build the salad
Arrange the greens on a large platter or in bowls. Neatly line the toppings — grilled chicken, eggs, avocado, tomatoes, bacon, and cheese — in elegant rows.

  5. Finish & serve
Drizzle with dressing just before serving and sprinkle with fresh herbs.

Serving Notes

Serve with warm crusty bread or garlic toast. For a lighter option, swap bacon for turkey bacon or use grilled shrimp instead of chicken.
