Classic Meatloaf with Gravy

Classic Meatloaf with Gravy

Ingredients

Meatloaf

  • 1½ lb (680 g) ground beef (80/20 works best)
  • 1 cup breadcrumbs or crushed crackers
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • ½ cup milk
  • ⅓ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning (or thyme)

Topping

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix all meatloaf ingredients until just combined (don’t overmix).
  3. Shape into a loaf or place in a greased loaf pan.
  4. Mix topping ingredients and spread over the loaf.
  5. Bake uncovered for 55–65 minutes, until internal temp reaches 160°F (71°C).
  6. Rest 10 minutes before slicing.

Simple Brown Gravy

  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups beef broth
  • Salt & pepper to taste

Method:
Melt butter → whisk in flour → cook 1 min → slowly add broth → simmer until thick.


Creamy Mashed Potatoes

  • 2 lb potatoes, peeled & cubed
  • ½ cup milk or cream
  • 4 tbsp butter
  • Salt to taste

Boil potatoes until tender → mash with butter & milk → season.


Tender Glazed Carrots

  • 1 lb carrots, sliced
  • 2 tbsp butter
  • 1 tbsp brown sugar
  • Pinch of salt

Simmer carrots until tender → drain → toss with butter & sugar.
