A Sweet Potato Rocambole with Minced Meat is a delicious, savory rolled dish featuring a soft sweet potato dough filled with flavorful minced meat. It’s perfect for special occasions or as a comforting meal.

Ingredients

For the Dough:

  • 2 large sweet potatoes (about 500g), peeled and boiled
  • 1 cup all-purpose flour (or more as needed)
  • 1 egg
  • ¼ cup grated Parmesan cheese (optional)
  • ½ tsp salt
  • ½ tsp black pepper

For the Filling:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • ½ lb (250g) ground beef (or chicken/turkey)
  • ½ tsp paprika
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp tomato paste
  • ¼ cup chopped fresh parsley
  • ½ cup shredded mozzarella or cheddar cheese (optional)

Instructions

Step 1: Prepare the Dough

  1. Mash the boiled sweet potatoes until smooth. Let them cool slightly.
  2. Mix in the egg, Parmesan cheese, salt, and pepper.
  3. Gradually add flour until a soft but manageable dough forms. Avoid over-kneading.

Step 2: Cook the Filling

  1. Heat olive oil in a pan and sauté the onion until translucent.
  2. Add garlic and cook for 30 seconds.
  3. Add the ground meat, breaking it up as it browns.
  4. Stir in paprika, oregano, salt, pepper, and tomato paste. Cook for 5-7 minutes until the mixture is well combined.
  5. Remove from heat and mix in fresh parsley. Let it cool.

Step 3: Assemble the Rocambole

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the sweet potato dough into a rectangular shape on a floured surface (about ¼-inch thick).
  3. Evenly spread the minced meat filling over the dough, leaving a small border.
  4. Sprinkle cheese on top if using.
  5. Carefully roll the dough into a log, using the parchment paper to help. Seal the edges.
  6. Transfer to the baking sheet and brush with a little olive oil or an egg wash.

Step 4: Bake & Serve

  1. Bake for 25-30 minutes, or until golden brown and firm to the touch.
  2. Let it rest for a few minutes before slicing.

  • Serve with a fresh green salad or roasted vegetables.
  • Drizzle with a yogurt sauce or garlic aioli for extra flavor.
