Savory Potato Pancake with Creamy Yogurt Sauce
Ingredients
For the Potato Pancakes:
- 2 large potatoes, peeled and grated
- 1 small onion, grated
- 1 egg
- ¼ cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon paprika (optional)
- 2 tablespoons chopped fresh parsley (optional)
- Oil for frying
For the Creamy Yogurt Sauce:
- ½ cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
- 1 tablespoon fresh dill or parsley, chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
1. Prepare the Potato Pancakes:
- Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, mix the potatoes, grated onion, egg, flour, salt, pepper, garlic powder, and paprika. Stir well.
- Heat a few tablespoons of oil in a large pan over medium heat.
- Scoop about ¼ cup of the mixture into the pan and flatten it into a pancake shape.
- Cook for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
2. Make the Yogurt Sauce:
- In a small bowl, mix yogurt, lemon juice, minced garlic, dill (or parsley), salt, and pepper.
- Stir well and let it sit for 5 minutes for the flavors to blend.
3. Serve and Enjoy!
