Mexican Taco Lasagna

 








Mexican Taco Lasagna

Ingredients:

  • 1 lb (450g) ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 can (14 oz) diced tomatoes (or Rotel)
  • 1/2 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (optional)
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream (or Greek yogurt)
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 cup sliced black olives (optional)

Instructions:

1. Preheat the oven to 375°F (190°C).

2. Cook the Meat:

  • In a large skillet, cook ground beef over medium heat until browned.
  • Add onion and garlic, cooking until soft.
  • Stir in taco seasoning, diced tomatoes, and salsa.
  • Simmer for 5 minutes, then add black beans and corn.

3. Assemble the Lasagna:

  • In a greased 9x13 baking dish, layer tortillas to cover the bottom.
  • Add half the meat mixture and spread evenly.
  • Sprinkle with cheese and add another layer of tortillas.
  • Repeat with the remaining meat and cheese.

4. Bake for 20-25 minutes until cheese is melted and bubbly.

5. Cool for 5 minutes, then top with sour cream, cilantro, and olives.

6. Serve & Enjoy!
