Mexican Taco Lasagna
Ingredients:
- 1 lb (450g) ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 can (14 oz) diced tomatoes (or Rotel)
- 1/2 cup salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (optional)
- 8 small flour or corn tortillas
- 2 cups shredded Mexican cheese blend
- 1 cup sour cream (or Greek yogurt)
- 1/4 cup chopped fresh cilantro (optional)
- 1/2 cup sliced black olives (optional)
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the Meat:
- In a large skillet, cook ground beef over medium heat until browned.
- Add onion and garlic, cooking until soft.
- Stir in taco seasoning, diced tomatoes, and salsa.
- Simmer for 5 minutes, then add black beans and corn.
3. Assemble the Lasagna:
- In a greased 9x13 baking dish, layer tortillas to cover the bottom.
- Add half the meat mixture and spread evenly.
- Sprinkle with cheese and add another layer of tortillas.
- Repeat with the remaining meat and cheese.
